The Ginger Pig

'The Ginger Pig story started with sausages. Many years ago, Tim Wilson bought three Tamworth pigs, Milly, Molly and Mandy, after he became interested in farming rare and native breeds and traditional butchery. In those days, the prime cuts were in demand, but he found that there was plenty of high-quality meat left. What began many years ago as a means of being sustainable, soon became what we were known for – the art of sausage making. From farmers markets to the relaunch of Borough Market in London, word quickly spread, and we found our home.'

Life of Fish

'David used to clean the bins out at Billingsgate fish market, age 14. Not what most teenagers get up to... Life Of Fish is founded by David Palmer, and his partner Ruth Howsam by accident at the start of the pandemic. From a pop up fish stall outside a coffee shop in Tooting, to owning the concession in Selfridges food hall.'

Hook & Son

'The Hook family have been farming in East Sussex for over 250 years. Father and son, Phil and Steve Hook, have been in partnership at Longleys Farm in Hailsham since 1991, and began farming fully organically in 2000. However, Phil and Steve realised that, at 25p per litre, their cows’ milk was valued too little by the dairy industry – so, in 2007, they decided to secure a raw milk licence and begin selling milk directly to the public instead.'

Shellseekers Fish & Game

'Shellseekers Fish & Game located at the famous Borough Market is known for our excellent selection of quality seafood ranging from fresh local fish, shellfish, cured and smoked fish and game products. The business has been running for over 27 years, from humble beginnings at a rented table in Borough Market to an established stall with a pride of place. Darren Brown has been a long-standing trader at Borough, very much one of the founding members.'

Northfield Farm

'Jan McCourt and his family have farmed at Northfield Farm since 1994. His son Leo now does most of the day to day farming. Leo also pitches in to help his brother Dom down in London’s Borough Market. The McCourt family’s Irish farming roots go back almost two centuries in The Cooley Hills. Now, like then, very much a family affair. There is even another generation ready to help. We age specific cuts of meat and whole carcases in our dry-aging cabinets and hanging fridges for weeks and sometimes even months to produce the most flavourful and tender meats you could ever imagine.'
